Pig shanks
4 small pork shanks,
1 onion,
2 carrots,
3 stalks of celery,
5 tablespoons of olive oil,
3 tablespoons vegetable broth,
40 g of butter,
2 glass of dry white wine,
hot broth,
1 glass of white wine (or beer),
50 g of type 00 flour,
1 sprig of sage,
1 sprig of rosemary,
2 leaves of laurel,
salt,
pepper.
Typical dish of the Trieste area, it is often preferred to the calf shank for its reduced size and the tastiest taste. It goes with "chifeleti" potatoes. The "schinchetto" is often cooked in beer, as in Austria, probably for degreasing the meat and some versions prefer it boiled together with sauerkraut.
