Stuffed hen
1 hen, already cleaned, weighing approximately 1,2 kg (let the butcher give you its offal),
1 tablespoon chopped parsley,
1 clove of garlic,
6 leaves of cabbage,
3 leaves of sage,
80 g bacon spread in slices,
80 g grated Parmesan cheese,
2 tablespoons of breadcrumbs,
2 eggs,
2 carrots,
2 ribs of celery,
1 onion,
salt,
pepper,
½ glass of milk.
"Chi no ghe piasi galina col pien, merita pache opur velen" (it is the dialectal version for 'Who does not like the stuffed chicken, deserves beating or poison') recites the proverb. The recipe, however, proposes the boiled hen instead of in the oven, recovering in some way the ancient custom of boiling it for a long time (old hen of course, because sacrificing the hen meant no more eggs) in the pot on the hearth, in a kitchen with hints of smoke.
