Potatoes in 'tecia'

Introduction
It is one of the typical dishes of Trieste cuisine. Some compare it to the Austrian boiled potatoes with sweet onion: the difference consists in the fact that in the potatoes in tecia the onion must be fried and not boiled. The pan must be made of iron, it should not be washed but only rubbed with rough paper so as not to lose the taste of the “golden crust”.
