The treasure of every land is the history of its products
The monofloral ailanthus honey derives from the nectar of the arboreal plant known as Ailanthus or Tree of Heaven (Ailanthus altissima, Simaroubaceae family). It is a liquid honey, but with time, a few months after the harvest, tends to crystallise. Its colour is amber when liquid and light amber when crystallised. Its aroma, of medium intensity, recalls dried mushrooms; its flavour, relatively marked, sometimes persistent, is reminiscent of muscat grapes and peach tea.
