Gratin mussels

Ingredients
about sixty fresh mussels,
3 garlic cloves,
50g of grated stale crumb,
1 bunch of parsley,
50g of grated Parmesan cheese,
4 tablespoons of extra virgin olive oil,
1 glass of dry white wine,
black pepper,
salt.

For any mussel-based recipe, a priority element is the cleaning: mussels are passed under running water, then the beard is pulled off (pulling it upwards) and, finally, they are vigorously brushed with a metal brush or steel wool. As for the smaller - but tastier - rock mussels, the white "dog teeth" must also be eliminated.
