Live mollusc bred in special farms located along the Trieste coast.
The “Pedocio de Trieste”, at the moment of consumption, must meet the following characteristics: the shell must have a smooth and black epidermis, on which the development lines of the mussel are visible; it must also be free of scales; the interior must be nacreous and the body must have a fringed black rim, under which four lamellar gills and the foot are distinguished; finally, the shell must be a minimum of 50mm and the mollusc must have a delicate and sea aroma.
