Live mollusc fished by hand or with trawling gear along the regional coast, where the sea bottom is rocky and characterised by rough substrates.
The rock Mussolo, at the moment of consumption, must have the following characteristics: the shell must have two rough, equal, non-equilateral valves, with a bulge of unusual shape reminiscent of primitive boats; its internal edge must be smooth, with a thin hinge with about 80, very small teeth; externally, the shell is brownish with white-reddish streaks; internally, the colouring is violet, mother of pearl and iridescent; the shell must be minimum 40mm in length and the mollusc must have a delicate sea aroma.
