'Steccato' beef

Introduction
The term 'steccare' is similar to lard, but generally refers to the insertion, always in the sense of meat fiber, of pieces of vegetables and garlic. If you do not have the specific tool (lard can) you can safely use a knife with a sharp tip to create the appropriate cutting boards in which to insert the "flavorers".
