Risotto with radicchio, whipped with Montasio

Ingredients
280 g of rice,
250 g of red radicchio,
100 g of butter,
150 g of Montasio,
1 tablespoon of cream,
1 shallot,
salt,
pepper,
a few pinches of marjoram
1 glass of white wine,
extra virgin olive oil,
50 g of grated Parmesan cheese.
Introduction
The red radicchio is characterized by an intense foliar lamina and by the typical central white rib that thins out in smaller veins. It is a diuretic and tonic vegetable, low in calories and a good vitamin content. Today there are varieties that cover the market in every season of the year.
