Beans with vinegar

Ingredients
500 g fresh beans,
1 coast of celery,
some leaf of laurel,
2 tablespoons extra virgin olive oil,
100 g of bacon,
1 onion,
½ glass of vinegar,
abundant parsley,
salt,
pepper.
Introduction
Typical dish of Carsolina cuisine, where it is also called "golas de fasoi", was considered a dish of lean (after all, legumes are called "meat of the poor"). If you add all the cooking water of the beans to lengthen the sauté you can get a good soup, similar to what you used to do for Good Friday.
