Scallops with speck

Difficulty: Medium Doses: for 4 people
Ingredients

12 scallops,

12 slices of Sauris speck,

300 g of dried black green beans,

300 g of fresh green tomatoes,

4 tablespoons extra virgin olive oil,

30 g of butter,

1 slice of bacon,

3 white onions,

1 clove of garlic,

2 chopped bay leaves,

salt,

pepper.

Introduction

The Meditteranean scallop (Pecten jacobaeus) are the most renowned members of the family of the Pectinids which include also the queen-scallops. Of the two valves one is convex, the other is flat. Soft, savory, fragrant (here in an unusual combination with mountain speck) scallops are available every month of the year.
