300g of dry white beans (dal Santisim bean)
300g of sour sauerkraut,
150g of pork with rind,
100g of smoked bacon,
2 potatoes,
1 onion,
1 garlic clove,
1 sprig of parsley,
1 pinch of cumin,
1 tablespoon of flour type 00,
2 tablespoons of yellow corn flour,
2 tablespoons of extra virgin olive oil,
salt,
The jota is perhaps the most typical of all the specialties of Trieste cuisine. It is basically a vegetable soup made from beans and sour sauerkraut. Probably born from a random and lucky encounter between leftovers. For a more robust flavour, it is advisable to add smoked pork ribs or a ham bone.
